In a medium bowl, whisk together eggs, milk, salt, and pepper until smooth.
Stir in the diced green bell pepper.
Heat 2 tablespoons butter in a large skillet over medium heat.
Pour in the egg mixture.
Cook while stirring gently until the eggs are fully cooked and fluffy.
Transfer the eggs to a plate and set aside.
Wipe the skillet clean if necessary.
Melt the remaining 2 tablespoons butter in the skillet over medium heat.
Place one tortilla in the skillet.
Sprinkle a portion of cheddar cheese over the tortilla, leaving a small border around the edge.
Add a layer of scrambled eggs.
Sprinkle chopped beef bacon over the eggs.
Add a little more cheese on top.
Place a second tortilla over the filling and gently press down.
Cook for 2–3 minutes until golden brown.
Carefully flip and cook the second side for another 2–3 minutes until crispy and the cheese has melted.
Repeat with the remaining tortillas and filling.
Slice the Easy Breakfast Quesadillas into wedges and serve immediately.
