- 1 cup shredded cheddar cheese
- 1 cup cooked beef sausage chopped (or turkey ham as an alternative)
- 1 cup fresh vegetables diced (bell peppers, onions, spinach, or tomatoes)
- 1/2 cup sour cream or Greek yogurt
- Hot sauce to taste
Whisk the eggs in a bowl until well combined.
Heat a skillet over medium heat and pour in the eggs. Cook while gently stirring until fluffy and fully set, about 3–4 minutes.
In the same skillet, cook the chopped beef sausage until browned and slightly crispy, about 5–7 minutes.
Lay one tortilla flat on a clean surface.
