Ingredients

  • 1 lb 450 g boneless, skinless chicken breasts
  • 1/2 cup 120 ml dill pickle juice
  • 1/2 cup 120 g ranch dressing
  • 1 cup 100 g shredded cheese
  • 8 small tortillas
  • 1/2 cup 75 g dill pickles, sliced or chopped
  • 1/4 cup 60 g diced red onion
  • 1/4 cup 60 g chopped fresh cilantro
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon cooking oil

Instructions

  • Place the chicken in a bowl or food-safe container and pour the dill pickle juice over it. Cover and marinate in the refrigerator for at least 30 minutes.
  • Remove the chicken from the marinade and discard the remaining pickle juice. Pat the chicken lightly with paper towels and season with salt and black pepper.
  • Heat a skillet over medium-high heat and add a small drizzle of cooking oil.
  • Add the chicken to the hot skillet. Cook for about 6–7 minutes per side, depending on thickness, until golden and the center reaches 165°F (74°C).
  • During the final stage of cooking, press the chicken firmly but carefully against the skillet with a sturdy spatula to encourage browned, caramelized edges. Remove from the heat, rest briefly, then chop or slice.
  • To make the crispy cheese lace, heat a separate nonstick skillet over medium heat. Sprinkle the shredded cheese into thin portions and cook until melted, bubbly, and golden around the edges.
  • Carefully turn the cheese if needed and cook until crisp, about 3–4 minutes total. Transfer to a paper towel-lined plate and allow it to cool and become crunchy.
  • Warm the tortillas in a dry skillet for approximately 30 seconds per side.
  • Assemble the Dill Pickle Ranch Smash Chicken Tacos by layering each tortilla with chicken, ranch dressing, dill pickles, diced red onion, and fresh cilantro.
  • Break the crispy cheese lace into pieces and arrange it over the tacos. Serve immediately with extra pickles and ranch dressing.

Notes

You can replace red onion with sliced green onions for a milder flavor. Chopped lettuce or shredded cabbage can also be added for extra freshness and crunch.
Serve these ranch chicken tacos with a simple salad, seasoned rice, corn, or fresh vegetables. For more heat, add sliced jalapeños or a drizzle of your favorite halal-friendly hot sauce.
The crispy cheese lace is best added immediately before serving so it maintains its delicate crunch.
