- 8 slices whole wheat sandwich bread crusts removed
- 1/2 cup cream cheese softened
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill finely chopped
- 1 teaspoon lemon juice
- 1 large cucumber thinly sliced
- 1/4 teaspoon salt divided
- 1/4 teaspoon freshly ground black pepper divided
- Optional: 4 thin slices radish
In a small bowl, combine the softened cream cheese, mayonnaise, fresh dill, lemon juice, half of the salt, and half of the pepper. Mix until smooth.
Spread the cream cheese mixture evenly over one side of each bread slice.
Arrange the cucumber slices evenly on four slices of bread.
Add the optional radish slices for extra crunch and color.
Sprinkle the remaining salt and pepper over the cucumber layer.
Place the remaining bread slices on top with the cream cheese side facing down.
Gently press each sandwich together.
Trim the crusts if needed and slice each sandwich diagonally into triangles.
