Ingredients
  

Dressing Ingredients

  • 3 tablespoon extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon grainy mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Salad Ingredients

  • 1 can chickpeas drained – 19 ounce (540 ml)
  • 4 Persian cucumbers diced
  • ½ cup feta cheese crumbled
  • ½ red onion finely chopped
  • 2 tablespoon fresh parsley chopped
  • 2 tablespoon fresh dill chopped

Instructions
 

  • Make Dressing: In a large serving bowl, whisk together olive oil, red wine vinegar, grainy mustard, salt, and black pepper until well combined.
  • Assemble Salad: Add chickpeas, diced cucumbers, crumbled feta, red onion, parsley, and dill into the bowl with the dressing.
  • Mix: Gently toss everything until evenly coated. Taste and adjust seasoning if needed. This Cucumber Chickpea Feta Salad can be served immediately or chilled for enhanced flavor.
