  • Caesar dressing for salad + 1/2 cup for breading
  • Breadcrumbs or panko crumbs
  • Flour for breading

  • 2 heads garlic roasted
  • 1 tbsp parsley finely chopped
  • 8 tbsp unsalted butter softened
  • 1/8 cup fresh parmesan grated
  • Salt and pepper

Instructions

  • Set up breading station: flour, Caesar dressing mixed with water, and breadcrumbs.
  • Coat chicken in flour, dip in dressing mixture, then coat in breadcrumbs.
  • Heat avocado oil in a pan. Fry chicken until golden and crispy on both sides.
  • Transfer to paper towels to drain excess oil.
  • Toss chopped romaine with Caesar dressing, lemon juice, and parmesan.
  • Assemble the Crunchy Chicken Caesar Sandwich with toasted bread, crispy chicken, salad, and extra parmesan.

Notes

  • Add sliced tomatoes or avocado for variation.
  • Use whole wheat rolls for a healthier twist.
  • Works great as a wrap instead of a sandwich.
