For the Salmon

  • 4 salmon fillets skin-on, about 6 ounces / 170 g each
  • ½ cup panko breadcrumbs
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Salt to taste
  • Freshly ground black pepper to taste

For the Lemon Dill Sauce

  • ½ cup Greek yogurt
  • 1 tablespoon fresh dill chopped
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • Pinch of salt

Optional Garnish

  • Fresh dill
  • Lemon wedges

Instructions
 

  • Step 1: Prepare the Herb Crust
  • In a medium bowl, combine the panko breadcrumbs, olive oil, garlic, parsley, dill, thyme, and lemon zest. Stir until the breadcrumbs are lightly coated and the mixture is slightly moist.
  • Step 2: Season the Salmon
  • Pat each salmon fillet dry using paper towels. Season both sides generously with salt and freshly ground black pepper.
  • Step 3: Coat the Salmon
  • Press the herb breadcrumb mixture firmly onto the flesh side of each salmon fillet so it adheres well.
  • Step 4: Heat the Pan
  • Heat a heavy skillet or cast-iron pan over medium-high heat. Add a tablespoon of olive oil and allow it to become hot without smoking.
  • Step 5: Cook the Salmon
  • Place the salmon into the skillet herb-side down. Gently press with a spatula to ensure even contact.
  • Cook for 4–5 minutes until the crust becomes golden brown and crispy.
  • Carefully flip the salmon and continue cooking for another 3–4 minutes until the fish flakes easily with a fork.

  • Step 6: Make the Lemon Dill Sauce
  • Whisk together the Greek yogurt, lemon juice, chopped dill, honey, and a pinch of salt until smooth.

  • Serve with a generous spoonful of lemon dill sauce and garnish with fresh dill and lemon wedges.

Notes

  • Skinless salmon also works well.
  • Sour cream may replace Greek yogurt.
  • Fresh chives can substitute for dill.
  • Serve with roasted vegetables, mashed potatoes, rice, quinoa, asparagus, or a fresh salad.
  • Leftover lemon dill sauce also makes an excellent vegetable dip.
