Ingredients
  

  • 1 lb eggplant cut into ½-inch pieces
  • 4 tbsp avocado oil or preferred high-heat cooking oil
  • 1 tsp kosher salt
  • ¼ tsp black pepper optional
  • ¼ tsp red chili flakes optional
  • 2 sprigs fresh thyme optional

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • In a large bowl, toss eggplant cubes with oil, salt, and optional seasonings.
  • Place eggplant in the air fryer basket in a single layer.
  • Cook Crispy Air Fryer Eggplant for 8 minutes.
  • Shake or toss the basket, then cook for another 7 minutes until golden and crispy on the outside and tender inside.
  • Serve warm and enjoy immediately.

Notes

  • Serve with yogurt dip, tahini sauce, or tomato sauce.
