Creamy Vegetable Casserole Recipe

  • 1 pound broccoli florets
  • 1 pound cauliflower florets
  • ½ pound baby carrots
  • 3 tablespoons butter
  • 3 cloves garlic minced
  • 2 tablespoons cornstarch
  • 2 cups heavy cream
  • 1½ teaspoons dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • ¼ to ½ teaspoon chili powder or to taste
  • ⅛ teaspoon ground nutmeg
  • ¾ cup shredded Italian blend cheese made with microbial or halal-certified rennet
  • 1 cup regular panko breadcrumbs
  • Cooking spray or butter for greasing the baking dish

Instructions
 

  • Step 1: Preheat the oven
  • Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter and set it aside.
  • Step 2: Cook the vegetables
  • Bring a large pot of water to a boil.
  • Add the broccoli florets, cauliflower florets, and baby carrots. Once the water returns to a boil, reduce the heat and simmer for 8–10 minutes, or until the vegetables are just fork-tender.
  • Drain the vegetables thoroughly and allow any excess moisture to evaporate.
  • Step 3: Prepare the garlic cheese sauce
  • While the vegetables are cooking, melt the butter in a large skillet over medium heat.
  • Add the minced garlic and cook for approximately 20 seconds, stirring constantly until fragrant.
  • Whisk in the cornstarch and cook for another minute.
  • Gradually pour in the heavy cream, whisking continuously to prevent lumps.
  • Bring the mixture to a gentle boil and cook for 3–4 minutes, stirring frequently, until the sauce thickens.
  • Step 4: Add the seasonings and cheese
  • Remove the skillet from the heat.
  • Stir in the dried Italian seasoning, salt, black pepper, chili powder, and ground nutmeg.
  • Add the shredded Italian cheese and whisk until completely melted and smooth.
  • Taste the sauce and adjust the seasonings if needed.
  • Step 5: Assemble the casserole
  • Spread approximately ½ cup of the prepared cheese sauce over the bottom of the greased baking dish.
  • Add the drained vegetables and season lightly with salt and pepper.
  • Pour the remaining cheese sauce over the vegetables and gently stir until everything is evenly coated.
  • Sprinkle the panko breadcrumbs evenly across the top.
  • Step 6: Bake the casserole

Notes

Gluten-free option: Replace regular panko breadcrumbs with certified gluten-free breadcrumbs or finely crushed gluten-free crackers.
Lighter option: Substitute part of the heavy cream with whole milk. The sauce will be less rich and may require a little additional cornstarch to reach the desired consistency.
Extra vegetables: Add mushrooms, zucchini, green beans, or peas to create a more colorful vegetable casserole.
