Ingredients
  

  • 1 Tbsp extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp dried oregano
  • 3 Tbsp unsalted butter
  • 3 garlic cloves minced
  • 1 1/2 cups cherry tomatoes halved
  • 3 cups baby spinach
  • 1/2 cup heavy cream
  • 1/2 oz Parmesan cheese finely grated
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt, black pepper, and oregano.
  • Cook chicken for about 8 minutes per side until golden brown and fully cooked to 165°F internally. Transfer to a plate.
  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in cherry tomatoes and season lightly with salt and pepper. Cook until tomatoes begin to soften and burst, about 5 minutes.
  • Add spinach and cook until wilted.
  • Pour in heavy cream and stir in Parmesan cheese.
  • Bring the sauce to a gentle simmer and cook for 3 minutes until slightly thickened.
  • Return the Creamy Tuscan Chicken to the skillet and simmer for another 5 minutes until heated through.
  • Serve warm with lemon wedges on the side.

Notes

  • Fresh spinach works best, but frozen spinach can be used if drained well.
  • For a lighter sauce, substitute half-and-half for heavy cream.
  • Add mushrooms for extra flavor and texture.
