Creamy Tomato Ravioli with Spinach

Creamy Tomato Ravioli is a quick one-pan dinner made with fresh ravioli, roasted tomatoes, spinach, Parmesan, and cream.
Simmer everything together until the ravioli is piping hot and the sauce is rich and creamy.
Serve immediately with fresh parsley for an easy 25-minute family dinner.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion finely diced
  • 2 cloves garlic peeled and minced
  • 500 g 1.1 lbs fresh ravioli
  • 1 red bell pepper sliced
  • ½ teaspoon Italian herbs
  • ½ teaspoon chili flakes
  • ½ teaspoon black pepper
  • Pinch of salt
  • 1 tablespoon tomato puree
  • 90 ml ⅓ cup chicken stock
  • 100 g 3.5 oz roasted cherry tomato halves
  • 120 ml ½ cup chicken stock
  • 90 ml ⅓ cup double cream or heavy cream
  • 90 g 3 packed cups baby spinach
  • 50 g ½ cup Parmesan, grated
  • 1 tablespoon fresh parsley finely chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4–5 minutes, stirring occasionally, until softened.
  • Add the minced garlic and cook for about 30 seconds, stirring continuously so the garlic does not burn.
  • Add the fresh ravioli and sliced red bell pepper. Stir gently and cook for about 1 minute.
  • Sprinkle in the Italian herbs, chili flakes, black pepper, and a pinch of salt. Add the tomato puree and 90 ml chicken stock, stirring well to combine.
  • Add the roasted cherry tomatoes, remaining chicken stock, and cream. Stir gently and bring the sauce to a simmer.
  • Cover loosely if needed and simmer for 5–6 minutes, or until the ravioli is piping hot in the center. Carefully open one ravioli to check that it is fully heated.
  • Add the baby spinach and grated Parmesan. Cook for about 1 minute, stirring gently, until the spinach wilts and the Parmesan melts into the sauce.
  • Sprinkle with fresh parsley and serve immediately. This Creamy Tomato Ravioli is best enjoyed while the sauce is warm and silky.

Notes

For a vegetarian version, use vegetable stock instead of chicken stock and choose ravioli and Parmesan made without animal-derived ingredients that do not meet your dietary requirements.
You can also use frozen ravioli, although the cooking time may need to be adjusted. For an extra-rich sauce, add a small splash of cream just before serving.
