Creamy Skillet White Beans with Parmesan is a quick one-pan dish.
Made with cannellini beans, herbs, and cream.

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • ¼ cup sliced shallot or yellow onion
  • 3 cups cannellini beans or 2 cans, drained
  • 2 garlic cloves grated or finely chopped
  • 1 tablespoon fresh rosemary thyme, or oregano (or 1 teaspoon dried)
  • 1 teaspoon kosher salt
  • ½ teaspoon crushed red pepper
  • ¼ cup chicken or vegetable broth
  • ¼ cup heavy cream or crème fraîche
  • 3 cups leafy greens kale or spinach
  • cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a skillet over medium-high heat. Add shallots and cook for 2–3 minutes until softened.
  • Stir in beans, garlic, herbs, salt, and red pepper. Cook briefly until fragrant.
  • Pour in broth and cream. Bring to a simmer and cook for about 10 minutes, stirring occasionally.
  • Reduce heat and add greens. Cook until wilted and vibrant.
  • Remove from heat, stir in Parmesan, and serve warm.
  • This Creamy Skillet White Beans with Parmesan is delicious on its own or served over pasta.
