Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 4 –6 garlic cloves minced
  • 6 –8 fresh sage leaves finely chopped
  • 1 1/2 cups milk of choice
  • 1/2 cup chicken or vegetable broth
  • 1 cup pumpkin puree
  • 1/2 teaspoon ground nutmeg
  • Kosher salt
  • Ground black pepper
  • 16 ounces gnocchi
  • 1/2 cup grated Parmesan cheese

Instructions

  • Heat the olive oil in a large skillet over medium heat.
  • Add the minced garlic and chopped sage. Sauté for about 30 seconds, just until fragrant.
  • Add the milk, broth, pumpkin puree, nutmeg, a pinch of salt, and black pepper. Stir well until the pumpkin is evenly incorporated.
  • Add the gnocchi to the skillet and stir gently to coat it in the pumpkin sauce.
  • Reduce the heat and simmer for up to 5 minutes, stirring occasionally, until the gnocchi is tender and the sauce has thickened slightly.
  • Serve the creamy pumpkin gnocchi hot, topped with grated Parmesan.
  • Taste and add more salt and pepper if needed.

Notes

For a vegetarian version, use vegetable broth and Parmesan made with a suitable vegetarian rennet if needed. For a richer sauce, use whole milk. You can also add sautéed mushrooms, baby spinach, or roasted vegetables for extra texture and flavor.
Serve with a simple green salad, roasted vegetables, or crusty bread for a complete meal.
