Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden and fully cooked. Remove and keep warm.
In the same skillet, sauté onion for 3–4 minutes until soft.
Add garlic and cook for 1–2 minutes.
Pour in apple juice and vinegar, scraping the pan. Simmer 5 minutes.
Add chicken broth and simmer another 5 minutes.
Lower heat and stir in heavy cream slowly.
Add Dijon mustard and thyme. Simmer until slightly thickened.
Season to taste.
Return chicken to skillet, spoon sauce over, and simmer 2–3 minutes.
Stir in butter until melted.
Serve warm, garnished with parsley.
