Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 cup apple juice non-alcoholic substitute
  • 1 tablespoon apple cider vinegar
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until golden and fully cooked. Remove and keep warm.
  • In the same skillet, sauté onion for 3–4 minutes until soft.
  • Add garlic and cook for 1–2 minutes.
  • Pour in apple juice and vinegar, scraping the pan. Simmer 5 minutes.
  • Add chicken broth and simmer another 5 minutes.
  • Lower heat and stir in heavy cream slowly.
  • Add Dijon mustard and thyme. Simmer until slightly thickened.
  • Season to taste.
  • Return chicken to skillet, spoon sauce over, and simmer 2–3 minutes.
  • Stir in butter until melted.
  • Serve warm, garnished with parsley.

  • Substitute apple juice with white grape juice if preferred.
