Ingredients
  

  • 8 –10 large eggs
  • 1 cup cottage cheese
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup shredded cheddar cheese or mozzarella
  • 1/2 –1 cup optional add-ins such as spinach diced bell peppers, mushrooms, onions, turkey ham, or beef sausage
  • Cooking spray

Instructions
 

  • Preheat the oven to 325°F. Spray a non-stick muffin tin with cooking spray. If using silicone muffin cups, spraying is optional.
  • Add the eggs, cottage cheese, salt, and pepper to a blender. Blend until smooth and fully combined.
  • Divide shredded cheese and any desired add-ins evenly among the muffin cups.
  • Pour the egg mixture into each cup, filling about 3/4 full.
  • Bake for 22–25 minutes or until the centers are fully set and the tops are lightly golden.
  • For air fryer cooking, cook the Cottage Cheese Egg Bites at 300°F for 12–14 minutes. Cover loosely with foil if browning too quickly.
  • Let the egg bites rest in the muffin tin for 5 minutes before removing and serving.

Notes

  • Add chopped spinach, mushrooms, onions, or bell peppers for extra flavor.
  • Turkey ham and beef sausage work well for added protein.
  • Serve with avocado, salsa, or fresh fruit for a balanced breakfast.
  • You can make mini egg bites using a mini muffin pan and reduce baking time slightly.
