Preheat the oven to 375°F (190°C) or preheat the air fryer to 350°F (177°C). Grease the basket or line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
Add the cottage cheese and stir with a fork until a crumbly dough forms.
Knead the dough in the bowl until it starts coming together. If it's too dry, add a little more cottage cheese. If it's too sticky, dust with extra flour.
Transfer the dough to a lightly floured surface and knead until a soft dough forms.
Shape the dough into a log and divide it into 8 equal pieces.
For plain Cottage Cheese Bagel Bites, roll each piece into a smooth ball.
For stuffed bagel bites, flatten each piece into a small circle, place a cube of cream cheese in the center, pinch the edges tightly closed, and roll into a ball.
Arrange the dough balls on the prepared baking sheet or air fryer basket.
Brush the tops with beaten egg (or water) and sprinkle with your preferred toppings.
Air fry for 10–12 minutes or bake for 12–14 minutes, until golden brown.
Cool for about 10 minutes before serving.
