Cinnamon Apple Cake Recipe

Ingredients
  

For the apples

  • 45 g granulated sugar
  • 1 tsp cinnamon
  • 2 apples peeled and diced

For the cinnamon swirl

  • 150 g light brown sugar
  • 2 tbsp cinnamon
  • 120 g unsalted butter melted

For the cake

  • 360 g plain flour
  • 200 g caster sugar
  • 4 tsp baking powder
  • 300 ml whole milk
  • 1 tsp vanilla extract
  • 2 large eggs lightly beaten
  • 110 g unsalted butter melted and cooled

For the glaze

  • 200 g icing sugar
  • 40 ml whole milk

Instructions
 

  • Preheat oven to 180°C (160°C fan) and line an 8x10-inch baking tray.
  • Toss diced apples with sugar and cinnamon, then set aside.
  • Mix brown sugar, cinnamon, and melted butter to create the swirl mixture.
  • In a large bowl, whisk flour, sugar, and baking powder.
  • Add milk, vanilla, and eggs; mix until just combined.
  • Stir in melted butter gently.
  • Fold in the apples and pour batter into the tray.
  • Spoon the cinnamon swirl over the top and swirl lightly.
  • Bake for 40–45 minutes until mostly set.
  • Prepare glaze by mixing icing sugar and milk until smooth.
  • Pour glaze over warm Cinnamon Apple Cake and let it soak in.
  • Cool for 45 minutes, slice, and serve.

Notes

  • Swap milk with plant-based alternatives if needed
  • Add a pinch of nutmeg for extra warmth
  • Serve with whipped cream or vanilla ice cream
