Ingredients

  • 2 overripe bananas
  • ¼ cup peanut butter crunchy or smooth
  • 1 cup chocolate chips

Instructions

  • Slice the bananas into about 12 slices per banana. You can slice them crosswise or lengthwise depending on your preferred shape.
  • Spread about 1 teaspoon of peanut butter onto one banana slice and top it with another banana slice to create a sandwich.
  • Place the peanut butter banana sandwiches onto a baking sheet or tray lined with parchment paper.
  • Freeze for 15 minutes so the banana bites firm up before dipping.
  • While the bananas chill, melt the chocolate chips. Microwave in 30-second intervals, stirring each time until smooth. You can also melt the chocolate using a double boiler on the stovetop.
  • Remove the banana bites from the freezer. Using a fork, dip each one into the melted chocolate until fully coated.
  • Return the coated Chocolate Peanut Butter Banana Bites to the tray and freeze for another 15 minutes or until the chocolate hardens.
  • Transfer the frozen bites to an airtight container and store in the freezer for up to 2 weeks.

Notes

  • Almond butter or sunflower seed butter can replace peanut butter if needed.
  • Mini chocolate chips melt faster and coat more evenly.
  • Serve straight from the freezer for the best texture.
  • These bites pair wonderfully with smoothies or iced coffee.
