Chocolate Peanut Butter Banana Bites are a simple frozen snack made with bananas, peanut butter, and dark chocolate.
They are easy to prep ahead and store in the freezer.

Ingredients
  

  • 3 ripe bananas
  • 1/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions
 

  • Peel the bananas and slice them into rounds about 1/4 inch thick.
  • Line a platter or small baking sheet with parchment paper.
  • Spread about 1/2 teaspoon of peanut butter onto one banana slice, then top with another slice to make a small sandwich. Repeat until all banana slices are used. You should have about 30 bites.
  • Arrange the bites on parchment-lined platters or plates and freeze for about 1 hour, or until firm.
  • After the bites have chilled, place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 1 minute, stir, then continue microwaving in 30-second intervals until fully melted.
  • Remove one platter of frozen Chocolate Peanut Butter Banana Bites from the freezer. Dip each bite into the melted chocolate so half is coated. For a full coating, use extra chocolate if needed.
  • Return the dipped bites to the parchment-lined platter. Repeat with the second batch.
  • Freeze again for about 15 minutes, or until the chocolate is set.
  • Enjoy right away or transfer to a freezer-safe container for later.

Notes

These bites are great as a light dessert, lunchbox freezer treat, or post-dinner snack. For a richer finish, dip the entire bite in chocolate. You can also drizzle extra melted chocolate over the top for a prettier presentation. Serve slightly softened for the best texture.
