Peel the bananas and slice them into rounds about 1/4 inch thick.
Line a platter or small baking sheet with parchment paper.
Spread about 1/2 teaspoon of peanut butter onto one banana slice, then top with another slice to make a small sandwich. Repeat until all banana slices are used. You should have about 30 bites.
Arrange the bites on parchment-lined platters or plates and freeze for about 1 hour, or until firm.
After the bites have chilled, place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 1 minute, stir, then continue microwaving in 30-second intervals until fully melted.
Remove one platter of frozen Chocolate Peanut Butter Banana Bites from the freezer. Dip each bite into the melted chocolate so half is coated. For a full coating, use extra chocolate if needed.
Return the dipped bites to the parchment-lined platter. Repeat with the second batch.
Freeze again for about 15 minutes, or until the chocolate is set.
Enjoy right away or transfer to a freezer-safe container for later.
