Line a quarter sheet pan or small baking tray with parchment paper.
Place the raspberries in a small bowl and mash thoroughly using the back of a fork.
Stir in the chia seeds until evenly combined.
Let the mixture rest for 5–10 minutes to thicken.
Scoop about 1 tablespoon of the raspberry mixture onto the prepared tray. Repeat until you have 8–10 portions.
Freeze for 1 hour or until completely firm.
Place the chocolate in a microwave-safe bowl and microwave for 30 seconds. Stir, then continue heating in 10–15 second intervals until smooth.
Stir the coconut oil into the melted chocolate.
Dip each frozen raspberry bite into the chocolate until fully coated.
Return the coated bites to the parchment-lined tray.
Sprinkle each with a tiny pinch of flaky sea salt before the chocolate sets.
Freeze for another hour until the chocolate hardens completely.
