Chocolate Covered Raspberry Bites

Chocolate Covered Raspberry Bites are an easy frozen dessert made with fresh raspberries, chia seeds, and dark chocolate.

Ingredients
  

  • 1 heaping cup fresh raspberries about 6 ounces / 170 g
  • 1 tablespoon chia seeds
  • 5 ounces dark chocolate or your preferred chocolate
  • 1 teaspoon coconut oil
  • Pinch of flaky sea salt

Instructions
 

  • Line a quarter sheet pan or small baking tray with parchment paper.
  • Place the raspberries in a small bowl and mash thoroughly using the back of a fork.
  • Stir in the chia seeds until evenly combined.
  • Let the mixture rest for 5–10 minutes to thicken.
  • Scoop about 1 tablespoon of the raspberry mixture onto the prepared tray. Repeat until you have 8–10 portions.
  • Freeze for 1 hour or until completely firm.
  • Place the chocolate in a microwave-safe bowl and microwave for 30 seconds. Stir, then continue heating in 10–15 second intervals until smooth.
  • Stir the coconut oil into the melted chocolate.
  • Dip each frozen raspberry bite into the chocolate until fully coated.
  • Return the coated bites to the parchment-lined tray.
  • Sprinkle each with a tiny pinch of flaky sea salt before the chocolate sets.
  • Freeze for another hour until the chocolate hardens completely.
  • Serve straight from the freezer and enjoy your Chocolate Covered Raspberry Bites.
