In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
Heat milk until warm, then slowly pour into the mixture while whisking.
Return to heat and cook until thickened into custard. Let cool completely.
Prepare the dough by kneading flour, sugar, yeast, warm milk, eggs, and butter until smooth.
Let the dough rise for 1.5 hours or until doubled.
Roll dough into a rectangle. Spread cooled custard on half and sprinkle chocolate chips.
Fold dough over, then cut into strips.
Arrange on a baking sheet and let rise for 45 minutes.
Brush with egg wash and bake at 375°F (190°C) for 15–20 minutes.
Brush with light syrup while warm for a glossy finish.
