Chocolate Chip Vanilla Custard Brioches

Soft brioche filled with vanilla custard and chocolate chips.

Ingredients
  

For Dough

  • 3.5 cups all-purpose flour
  • cup sugar
  • 2.25 tsp instant yeast
  • ½ cup warm milk
  • 3 large eggs room temperature
  • ½ cup softened butter

For Custard

  • 2 cups milk
  • 4 large egg yolks
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 2 tsp vanilla bean paste

Filling

  • 1 cup semi-sweet chocolate chips

Instructions
 

  • In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  • Heat milk until warm, then slowly pour into the mixture while whisking.
  • Return to heat and cook until thickened into custard. Let cool completely.
  • Prepare the dough by kneading flour, sugar, yeast, warm milk, eggs, and butter until smooth.
  • Let the dough rise for 1.5 hours or until doubled.
  • Roll dough into a rectangle. Spread cooled custard on half and sprinkle chocolate chips.
  • Fold dough over, then cut into strips.
  • Arrange on a baking sheet and let rise for 45 minutes.
  • Brush with egg wash and bake at 375°F (190°C) for 15–20 minutes.
  • Brush with light syrup while warm for a glossy finish.

Notes

  • You can substitute vanilla bean paste with vanilla extract
  • Serve warm with coffee or tea
  • Add a dusting of powdered sugar for presentation
