Ingredients
  

  • 2 eggs
  • cup unsalted peanut butter
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup vanilla protein powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt omit if using salted peanut butter
  • ½ cup chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla extract until smooth and well combined.
  • Add the protein powder, baking soda, and salt. Stir until a thick dough forms.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a 2-tablespoon cookie scoop, portion the dough and roll into balls.
  • Place the dough balls on the prepared baking sheet and gently flatten them. These Chocolate Chip Protein Cookies will not spread much during baking, so shape them as desired.
  • Bake for 8–12 minutes, or about 10 minutes for a soft and chewy texture.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 20 minutes.
  • Serve and enjoy.

Notes

  • Swap peanut butter with almond butter or cashew butter.
  • Use coconut sugar or brown sugar for a slightly different flavor profile.
  • Mini chocolate chips distribute more evenly throughout the dough.
  • Serve with milk, coffee, or a protein shake.
