Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla extract until smooth and well combined.
Add the protein powder, baking soda, and salt. Stir until a thick dough forms.
Fold in the chocolate chips until evenly distributed throughout the dough.
Using a 2-tablespoon cookie scoop, portion the dough and roll into balls.
Place the dough balls on the prepared baking sheet and gently flatten them. These Chocolate Chip Protein Cookies will not spread much during baking, so shape them as desired.
Bake for 8–12 minutes, or about 10 minutes for a soft and chewy texture.
Remove from the oven and allow the cookies to cool on the baking sheet for 20 minutes.
