Ingredients
  

  • 40 oz refrigerated chocolate chip cookie dough
  • 16 oz cream cheese softened
  • 1 large egg room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon juice optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Place the cookie dough in the freezer for 2–3 hours to make slicing easier.
  • Line a 13×9-inch baking pan with parchment paper or non-stick foil.
  • Slice half of the cookie dough into approximately ¼-inch slices.
  • Arrange the slices across the bottom of the prepared pan and gently press together into an even layer.
  • Bake for 10 minutes.
  • While the crust bakes, beat the softened cream cheese, egg, granulated sugar, vanilla extract, and optional lemon juice until smooth and creamy.
  • Remove the crust from the oven and immediately spread the cheesecake mixture evenly over it.
  • Slice the remaining cookie dough and arrange the slices across the cheesecake layer.
  • Return the pan to the oven and bake for 35–40 minutes, or until the top is lightly golden and the cheesecake is mostly set.
  • Allow the Chocolate Chip Cheesecake Bars to cool completely.
  • Refrigerate for at least 2 hours before slicing into bars and serving.

Notes

  • Lemon juice adds a subtle brightness but can be omitted.
  • Serve chilled with fresh strawberries or raspberries.
  • Drizzle with chocolate or caramel sauce for an extra indulgent dessert.
  • Sprinkle mini chocolate chips over the top after baking for additional texture.
