Chipotle Lime Shrimp Bowl – Easy & Flavorful Recipe

Ingredients
  

For the Chipotle Lime Shrimp

  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 2 limes
  • 2 cloves garlic minced
  • ¼ cup chopped fresh cilantro optional

For the Bowls

  • 2 cups cooked white or brown rice warm
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ½ red onion thinly sliced
  • 1 avocado sliced
  • 1 handful fresh spinach or mixed greens
  • ¼ cup chopped fresh cilantro
  • Lime wedges for serving
  • Jalapeño slices for serving
  • Salt and pepper to taste

For the Chipotle Lime Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chipotle powder
  • ½ teaspoon ground cumin
  • Pinch of salt

Instructions
 

  • Step 1: Marinate the Shrimp
  • In a medium mixing bowl, whisk together the olive oil, chipotle powder, ground cumin, garlic powder, smoked paprika, salt, black pepper, fresh lime juice, and minced garlic.
  • Add the peeled and deveined shrimp, tossing gently until every piece is evenly coated in the smoky citrus marinade.
  • Let the shrimp marinate in the refrigerator for 5–10 minutes while you prepare the remaining ingredients.
  • Avoid marinating the shrimp for too long, as the lime juice can begin to change its texture.
  • Step 2: Prepare the Rice
  • Cook the white or brown rice according to the package instructions.
  • Once cooked, fluff the rice gently with a fork and keep it covered so it stays warm until you're ready to assemble the bowls.
  • If you're using leftover rice, reheat it thoroughly before serving.
  • Step 3: Sear the Shrimp
  • Heat a large skillet over medium-high heat.
  • Add the marinated shrimp in a single layer, working in batches if necessary to avoid overcrowding the pan.
  • Cook for approximately 2–3 minutes per side, depending on the size of the shrimp, until they turn pink, become opaque, and develop lightly charred edges.
  • The shrimp should reach an internal temperature of 145°F (63°C).
  • Transfer the cooked shrimp to a plate and cover loosely with foil to keep warm.
  • Step 4: Make the Chipotle Lime Dressing
  • In a small jar or mixing bowl, combine the olive oil, fresh lime juice, chipotle powder, ground cumin, and a pinch of salt.
  • Shake the jar or whisk the ingredients until the dressing becomes well combined.
  • Taste and adjust with additional lime juice or salt if desired.
  • Step 5: Prepare the Fresh Toppings
  • Halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and slice the avocado.
  • Wash and dry the spinach or mixed greens.
  • Chop the fresh cilantro and prepare the lime wedges and optional jalapeño slices.
  • Having everything ready before assembly makes building the bowls quick and effortless.
  • Step 6: Assemble the Bowls
  • Divide the warm rice evenly among four serving bowls.
  • Add a handful of spinach or mixed greens over the rice, followed by the cherry tomatoes, cucumber, red onion, and avocado slices.
  • Arrange the warm chipotle shrimp over the vegetables.
  • For a beautiful presentation, keep the ingredients in separate sections so their colors and textures stand out.
  • Step 7: Add the Dressing and Garnishes
  • Drizzle the homemade chipotle lime dressing over each bowl.
  • Sprinkle with freshly chopped cilantro and add a squeeze of lime juice.
  • Finish with jalapeño slices, if desired, and a small pinch of salt and black pepper.
  • Step 8: Serve and Enjoy

Notes

For an extra-filling meal, add black beans, roasted corn, or grilled bell peppers.
If you prefer a creamy dressing, mix a spoonful of plain Greek yogurt into the chipotle lime dressing. This variation will no longer be dairy-free.
For a milder flavor, reduce the chipotle powder and omit the jalapeño slices.
For additional heat, sprinkle crushed red pepper flakes over the finished bowls.
You can also replace the rice with quinoa, cauliflower rice, or shredded lettuce depending on your preferences.
Serve with extra lime wedges, fresh cilantro, or a side of warm corn tortillas.
