Ingredients

  • 1 ½ cups cooked chickpeas or 1 14-ounce can, drained and rinsed
  • 1 ripe avocado pitted
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large garlic clove minced
  • 1 celery rib diced
  • ¼ cup finely chopped pickles
  • ¼ cup finely chopped fresh dill or to taste
  • 2 green onions finely chopped
  • Pinch of fine sea salt
  • Pinch of freshly ground black pepper

For Serving

  • Whole grain bread pitas, bagels, or tortillas
  • Lettuce or arugula
  • Mustard

Instructions

  • Add the chickpeas to a medium bowl. Mash them with a potato masher or the back of a fork until mostly broken down, leaving a few chickpeas whole for texture.
  • Add the avocado and mash it into the chickpeas until combined.
  • Add the lemon juice, minced garlic, green onions, celery, dill, chopped pickles, salt, and black pepper.
  • Stir everything together until the mixture is creamy and well combined. Taste and adjust the seasoning, adding more lemon juice or salt if desired.
  • To assemble the chickpea avocado sandwich, spread the smashed chickpea mixture over a slice of bread.
  • Add lettuce or arugula and a little mustard, if desired. Top with another slice of bread.
  • Slice and serve immediately.

Notes

For the best flavor, serve the smashed chickpea mixture shortly after preparing it. You can also serve it as an avocado chickpea salad over greens instead of making sandwiches.
For extra flavor, try adding a little Dijon mustard, a pinch of red pepper flakes, or additional fresh dill. Toasted sunflower seeds or pumpkin seeds can also add a pleasant crunch.
