Chicken with Mango Salsa

Chicken with Mango Salsa is a healthy dinner featuring juicy seasoned chicken topped with fresh mango salsa made with lime, cilantro, peppers, and onions. Bake, grill, or air fry for an easy tropical meal ready in about 40 minutes.

Ingredients
  

For the Chicken

  • 3 –4 chicken breasts about 1½–2 pounds
  • 2 tablespoons olive oil
  • ½ –1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon cracked black pepper
  • ½ teaspoon dried oregano

For the Mango Salsa

  • 2 ripe mangoes diced (about 3 cups)
  • 1 red bell pepper diced
  • 1 jalapeño seeded and diced
  • 2 tablespoons finely diced red onion
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • cup chopped fresh cilantro
  • ¼ teaspoon sea salt

Instructions
 

Bake the Chicken

  • Preheat the oven to 425°F (220°C).
  • Place the chicken breasts in a 9×13-inch baking dish.
  • Pound the chicken to an even thickness of about 1 inch to ensure even cooking.
  • Brush both sides with olive oil.
  • In a small bowl, combine the sea salt, garlic powder, chili powder, cumin, smoked paprika, cracked pepper, and oregano.
  • Sprinkle the seasoning mixture evenly over both sides of each chicken breast.
  • Bake for 17–22 minutes, or until the internal temperature reaches 165°F (74°C). Thicker chicken breasts may require additional cooking time.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.

Prepare the Mango Salsa

  • While the chicken cooks, combine the diced mangoes, red bell pepper, jalapeño, red onion, lime juice, lime zest, cilantro, and sea salt in a mixing bowl.
  • Stir gently until everything is evenly mixed.
  • Chill until ready to serve.

Serve

  • Top each chicken breast with a generous spoonful of the fresh Chicken with Mango Salsa mixture and serve immediately.

Grilling Instructions

  • Preheat the grill to medium-high heat.
  • Lightly oil the grill grates.
  • Grill the chicken for about 8–10 minutes per side, or until it reaches an internal temperature of 165°F (74°C).

Air Fryer Instructions

  • Preheat the air fryer to 360°F (182°C).
  • Lightly oil the basket.
  • Cook the chicken for 8–10 minutes per side, checking that the internal temperature reaches 165°F (74°C).

Notes

  • Chicken thighs can be substituted for chicken breasts if preferred.
  • Fresh pineapple can replace mango for a different tropical variation.
  • Serve over rice, quinoa, cauliflower rice, or mixed greens.
  • Leftover salsa also pairs well with grilled fish, shrimp, or tacos.
  • Add sliced avocado for extra richness.
