Chicken Souvlaki Tray Bake

A simple Chicken Souvlaki Tray Bake with marinated chicken, potatoes, and vegetables.
Roasted in one pan for easy cooking and cleanup.

Ingredients
  

Marinade

  • 60 ml ¼ cup extra-virgin olive oil
  • 1 tbsp freshly minced garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • tsp sea salt flakes
  • ½ tsp freshly cracked black pepper

Chicken & Veggies

  • 600 g potatoes sliced into thin wedges
  • 1 red onion cut into thick wedges
  • 200 g capsicums bell peppers, sliced
  • 1 kg boneless skinless chicken thighs

To Serve

  • 100 g feta cheese sliced
  • Fresh dill sprigs optional
  • Toasted pita bread
  • Tzatziki store-bought or homemade
  • Lemon wedges

Instructions
 

  • Preheat the oven to 220°C (425°F), or 200°C fan-forced.
  • In a jug, combine all marinade ingredients and mix well.
  • Place potatoes, onion, and capsicum in a large baking dish. Add 1 tablespoon of marinade and toss to coat. Spread evenly.
  • Add the remaining marinade to the chicken and coat thoroughly.
  • Arrange the marinated chicken on top of the vegetables in a single layer.
  • Roast for 28 minutes or until the chicken is fully cooked and potatoes are tender.
  • Turn on the grill (broiler) and cook for an additional 2 minutes to crisp the edges.
  • Finish with feta, dill, olive oil drizzle, and cracked pepper.
  • Serve your Chicken Souvlaki Tray Bake with pita, tzatziki, and lemon wedges.

Notes

  • Serve with warm pita for a complete meal.
  • Tzatziki adds a refreshing creamy contrast.
  • Add olives for extra Mediterranean flavor.
