Chicken Pot Pie Orzo

Chicken Pot Pie Orzo is a creamy one-pan dinner made with tender orzo, cooked chicken, vegetables, herbs, and chicken broth.
Sauté the vegetables, add seasonings and flour, then simmer the orzo in chicken broth until tender.
Finish with cream, chicken, and peas for a cozy, family-friendly meal ready in about 35 minutes.

Ingredients
  

  • 3 Tbsp. unsalted butter
  • 1 small yellow onion diced small
  • 1 cup sliced baby carrots
  • 4 celery stalks diced
  • 1 tsp. garlic powder
  • 2 tsp. fresh thyme or 1 tsp. dried
  • 2 tsp. fresh rosemary minced, or 1 tsp. dried
  • 1 tsp. chicken bouillon seasoning
  • 1/2 tsp. salt plus more to taste
  • 1/2 tsp. paprika
  • 1/2 tsp. adobo seasoning
  • 1/2 tsp. black pepper
  • 1/4 cup all-purpose flour
  • 1 1/2 cups uncooked orzo
  • 3 cups chicken broth plus more as needed
  • 1 cup heavy cream or half & half
  • 2 cups cooked chicken shredded or chopped
  • 1/2 –1 cup frozen peas
  • Fresh parsley chopped, for garnish
  • Parmesan optional

Instructions
 

  • Sauté the vegetables: Melt the butter in a deep skillet over medium heat. Add the onion, carrots, and celery. Cook for 5–6 minutes, stirring occasionally, until the vegetables begin to soften.
  • Add the seasonings: Stir in the garlic powder, thyme, rosemary, bouillon seasoning, salt, paprika, adobo seasoning, and black pepper. Cook for about 1 minute, until fragrant.
  • Make the roux: Sprinkle the flour over the vegetables and stir well to coat everything. Cook for about 1 minute to remove the raw flour taste.
  • Cook the orzo: Stir in the uncooked orzo. Slowly pour in the chicken broth while stirring. Bring the mixture to a gentle simmer and cook uncovered for about 10 minutes, stirring occasionally to prevent the orzo from sticking. Add a little extra broth if the mixture becomes too thick before the orzo is tender.
  • Add the cream and chicken: Stir in the heavy cream and cooked chicken. Continue cooking for 2–3 minutes, until the chicken is heated through and the sauce is creamy. This is where the Chicken Pot Pie Orzo develops its rich, comforting texture.
  • Finish with peas: Add the frozen peas and cook for another 1–2 minutes. Taste and adjust the salt and pepper as needed.
  • Serve: Garnish with fresh parsley and optional Parmesan. Serve warm with biscuits or a simple side salad.

Notes

For extra comfort-food appeal, serve this creamy orzo with warm biscuits, crusty bread, or a crisp green salad. You can also add extra peas, carrots, corn, or green beans for more vegetables.
For a lighter version, use half & half instead of heavy cream. If you prefer a thicker consistency, let the finished orzo rest for 3–5 minutes before serving.
