Ingredients

For the Chicken Poblano Soup

  • 1 tablespoon unsalted butter or olive oil
  • ½ cup yellow onion chopped
  • 1 poblano pepper stems and seeds removed, chopped
  • 2 cups cooked shredded chicken
  • 1 15-ounce can black beans, drained but not rinsed
  • ½ cup frozen corn
  • 3 cups chicken broth
  • ½ cup heavy cream
  • ½ cup shredded Cheddar Pepper Jack, Colby Jack, or Mexican blend cheese
  • 2 teaspoons fresh lime juice
  • Finely chopped fresh cilantro for garnish

For the Seasoning Blend

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon ground cumin

Instructions

  • Melt the butter in a large saucepan, soup pot, or Dutch oven over medium heat.
  • Add the chopped onion and poblano pepper along with half of the seasoning blend. Cook for 5–6 minutes, stirring occasionally, until the vegetables soften and develop a little color.
  • Add the shredded chicken, drained black beans, frozen corn, chicken broth, and remaining seasoning. Stir everything together.
  • Increase the heat to medium-high and bring the soup to a gentle simmer. Reduce the heat as necessary and simmer uncovered for 15 minutes.
  • Stir in the heavy cream and shredded cheese. Continue stirring gently until the cheese has completely melted into the broth.
  • Bring the Chicken Poblano and Black Bean Soup back to a gentle simmer and cook uncovered for another 15 minutes. This gives the flavors time to develop and allows the broth to thicken slightly.
  • Stir in the fresh lime juice. Taste and adjust the salt and black pepper if necessary.
  • Divide the hot soup among bowls and garnish with finely chopped cilantro before serving.

Notes

Cheddar, Colby Jack, Pepper Jack, or a Mexican-style cheese blend can all be used. Choose the cheese based on how mild or spicy you want the finished soup.
For extra vegetables, diced bell peppers or chopped tomatoes can be added along with the onion and poblano.
You can also make this chicken and black bean soup heartier by adding extra beans or corn.
