For the Pasta

linguine
spaghetti, or penne

chicken breasts
sliced into strips

fresh mozzarella pearls or cubed mozzarella

basil pesto

cherry tomatoes
halved lengthwise

olive oil
Extra chopped basil for garnish

For the Homemade Basil Pesto

pine nuts

garlic clove

grated Parmesan cheese

olive oil

Instructions
Make the Basil Pesto
Add basil leaves, pine nuts, garlic, Parmesan cheese, and salt to a food processor or blender.
Pulse until the ingredients are finely combined.
With the motor running, slowly drizzle in the olive oil.
Blend until smooth but still slightly textured.
Set aside until ready to use.
Prepare the Pasta
Bring a large pot of salted water to a boil.
Cook the pasta according to package instructions until al dente.
Drain well and set aside.
Cook the Chicken
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Season the chicken strips generously with salt and pepper.
Cook for 5–7 minutes until golden and fully cooked.
Finish the Dish
Add the cherry tomatoes to the skillet.
Season lightly with salt and pepper.
Sauté for 3 minutes until slightly softened.
Turn off the heat.
Add the cooked pasta and basil pesto.
Toss until everything is evenly coated.
Add a splash of olive oil if needed to loosen the sauce.
Top with mozzarella pearls and garnish with chopped basil.
