Ingredients
  

For the Pasta

  • 1 pound linguine spaghetti, or penne
  • 2 chicken breasts sliced into strips
  • 8 ounces fresh mozzarella pearls or cubed mozzarella
  • 1 cup basil pesto
  • 1 cup cherry tomatoes halved lengthwise
  • 2 tablespoons olive oil
  • Extra chopped basil for garnish
  • Salt to taste
  • Black pepper to taste

For the Homemade Basil Pesto

  • 3 loosely packed cups basil leaves
  • 3 tablespoons pine nuts
  • 1 garlic clove
  • 2/3 cup grated Parmesan cheese
  • 2/3 cup olive oil
  • Salt to taste

Instructions
 

Make the Basil Pesto

  • Add basil leaves, pine nuts, garlic, Parmesan cheese, and salt to a food processor or blender.
  • Pulse until the ingredients are finely combined.
  • With the motor running, slowly drizzle in the olive oil.
  • Blend until smooth but still slightly textured.
  • Set aside until ready to use.

Prepare the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente.
  • Drain well and set aside.

Cook the Chicken

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Season the chicken strips generously with salt and pepper.
  • Cook for 5–7 minutes until golden and fully cooked.

Finish the Dish

  • Add the cherry tomatoes to the skillet.
  • Season lightly with salt and pepper.
  • Sauté for 3 minutes until slightly softened.
  • Turn off the heat.
  • Add the cooked pasta and basil pesto.
  • Toss until everything is evenly coated.
  • Add a splash of olive oil if needed to loosen the sauce.
  • Top with mozzarella pearls and garnish with chopped basil.
