Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 1/2 teaspoons minced garlic
  • 3/4 teaspoon Italian seasoning
  • 12 ounces short pasta such as farfalle
  • 1 cup basil pesto
  • 1 cup cherry tomatoes halved
  • 1/4 cup finely grated parmesan cheese
  • 1 tablespoon chopped fresh parsley or basil

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  • Heat olive oil in a large pan over medium-high heat.
  • Add the chicken pieces, season with salt and pepper, and cook for 3–4 minutes per side until golden and fully cooked.
  • Stir in garlic and Italian seasoning, cooking for 1 minute until fragrant.
  • Drain the pasta and add it directly to the pan with the chicken.
  • Add the pesto and toss everything together until evenly coated—this is where your Chicken Pesto Pasta comes together beautifully.
  • Gently fold in the cherry tomatoes.
  • Sprinkle with parmesan cheese and fresh parsley, then serve immediately.

Notes

  • You can use homemade or store-bought pesto.
  • Serve with garlic bread or a light green salad.
  • For a creamier version, stir in a splash of cooking cream.
