Chicken Caesar Pasta Salad is a creamy, fresh dish made with chicken, pasta, and crisp lettuce.

Ingredients
  

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • Zest and juice of 1 large lemon
  • 3 garlic cloves minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground black pepper
  • 1 teaspoon Worcestershire sauce

For the Salad:

  • 8 oz dry fusilli pasta
  • 6 cups chopped romaine lettuce or kale
  • 3 cups cooked chopped chicken
  • 2 cups halved cherry tomatoes
  • 1 avocado diced (optional)
  • cup shaved Parmesan cheese
  • Optional toppings: roasted chickpeas toasted pine nuts, pumpkin seeds, or croutons

Instructions
 

  • Prepare the dressing by whisking together mayonnaise, Parmesan, lemon zest, lemon juice, garlic, Dijon mustard, black pepper, and Worcestershire sauce until smooth.
  • Cook the pasta according to package instructions, then drain and let it cool.
  • In a large bowl, combine the cooked pasta, chopped lettuce, chicken, cherry tomatoes, and avocado if using.
  • Pour the dressing over the salad and toss gently until everything is evenly coated.
  • Sprinkle shaved Parmesan on top and add optional toppings before serving.

Notes

  • You can substitute Greek yogurt for part of the mayonnaise for a lighter dressing.
  • Add grilled corn or cucumbers for extra freshness.
  • Serve chilled for best flavor.
