Cheesy Potato Egg Scramble is a one-skillet breakfast made with crispy potatoes, fluffy eggs, melted cheese, and turkey ham.

Ingredients
  

  • 4 large eggs
  • 1½ tablespoons heavy cream or milk
  • 1½ teaspoons Old Bay seasoning or to taste
  • Salt to taste
  • Black pepper to taste
  • 1½ tablespoons frying oil or clarified butter
  • 4 cups 600 g chopped cooked potatoes
  • 2 ounces 60 g turkey ham, diced
  • 1 cup shredded cheese aged cheddar and Gruyère blend
  • Sour cream for serving
  • Fresh chives chopped

Instructions
 

  • In a medium bowl, whisk together the eggs, heavy cream, and Old Bay seasoning. Season lightly with salt and pepper.
  • Heat the oil or clarified butter in a large skillet over medium-high heat.
  • Add the cooked potatoes and cook until crispy and golden on all sides, stirring occasionally.
  • Stir in the diced turkey ham and cook for about 1 minute.
  • Pour the egg mixture evenly over the potatoes. Cook over low heat, gently stirring only a little so the eggs begin to set without becoming dry.
  • Sprinkle the shredded cheese evenly across the top of the Cheesy Potato Egg Scramble.
  • Cover the skillet with a lid and cook over low heat for 3–5 minutes, or until the cheese has completely melted and the eggs are fully cooked.
  • Garnish with chopped fresh chives and serve warm with a spoonful of sour cream.

Notes

  • Substitute turkey ham with cooked chicken or beef sausage if preferred.
  • Sharp cheddar alone also works well if Gruyère isn't available.
  • For extra crispiness, let the potatoes brown without stirring too often.
  • Serve with toast, fresh fruit, or a simple green salad.
