Ingredients

Cheesecake Taquitos

  • 2 blocks 8 ounces each cream cheese, softened
  • 1/2 cup sour cream
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 7 –8 small 8-inch flour tortillas

Topping

  • 1/2 cup salted butter melted
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon

Optional Serving Toppings

  • Sliced strawberries
  • Chocolate sauce
  • Caramel sauce
  • Fresh whipped cream

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a large baking sheet.
  • In a large mixing bowl, beat the softened cream cheese, sour cream, sugar, and vanilla extract until smooth and creamy. Make sure no lumps remain.
  • Warm the tortillas in the microwave for about 10 seconds to make them easier to roll.
  • Spread approximately 1/3 cup of the cheesecake filling onto one end of a tortilla.
  • Roll the tortilla tightly, leaving the ends open. Repeat with the remaining tortillas and filling.
  • Place the melted butter in a shallow dish.
  • In another shallow bowl, combine the sugar and cinnamon.
  • Roll each Cheesecake Taquito in the melted butter, then coat thoroughly in the cinnamon-sugar mixture.
  • Arrange the coated taquitos on the prepared baking sheet.
  • Bake for 15–20 minutes or until golden brown and crispy.
  • Remove from the oven and allow them to rest for 5 minutes before serving.
  • Serve warm with sliced strawberries, chocolate sauce, caramel sauce, or fresh whipped cream.

Notes

  • Substitute Greek yogurt for sour cream if desired.
  • Add a touch of lemon zest to the filling for a brighter flavor.
  • Serve with vanilla ice cream for an extra indulgent dessert.
  • Drizzle with honey or fruit syrup for a unique finishing touch.
  • These cinnamon sugar taquitos are best enjoyed warm.
