Preheat the oven to 350°F (175°C). Lightly grease a large baking sheet.
In a large mixing bowl, beat the softened cream cheese, sour cream, sugar, and vanilla extract until smooth and creamy. Make sure no lumps remain.
Warm the tortillas in the microwave for about 10 seconds to make them easier to roll.
Spread approximately 1/3 cup of the cheesecake filling onto one end of a tortilla.
Roll the tortilla tightly, leaving the ends open. Repeat with the remaining tortillas and filling.
Place the melted butter in a shallow dish.
In another shallow bowl, combine the sugar and cinnamon.
Roll each Cheesecake Taquito in the melted butter, then coat thoroughly in the cinnamon-sugar mixture.
Arrange the coated taquitos on the prepared baking sheet.
Bake for 15–20 minutes or until golden brown and crispy.
Remove from the oven and allow them to rest for 5 minutes before serving.
Serve warm with sliced strawberries, chocolate sauce, caramel sauce, or fresh whipped cream.
