Ingredients
  

  • 1/2 medium yellow onion diced
  • 8 ounces sharp yellow cheddar cheese shredded (about 2 cups)
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 1/2 teaspoons granulated garlic
  • 2 teaspoons kosher salt divided
  • 1/2 teaspoon freshly ground black pepper divided
  • 2 tablespoons double-concentrated tomato paste
  • 1 tablespoon halal-certified Worcestershire sauce or a mixture of soy sauce and apple cider vinegar
  • 1 carton 32 ounces beef broth
  • 1 can 14.5 ounces diced tomatoes with juices
  • 12 ounces elbow macaroni
  • Fresh chopped parsley or sliced scallions for garnish optional

Instructions
 

  • If you prefer a golden, bubbly topping, preheat the oven to broil and position the rack in the center.
  • Heat olive oil in a large Dutch oven or deep skillet over medium-high heat.
  • Add the diced onion and ground beef. Break the beef into small crumbles while cooking.
  • Season with granulated garlic, 1 teaspoon kosher salt, and 1/4 teaspoon black pepper. Cook for 6–7 minutes until the beef is browned and the onion becomes tender.
  • Stir in the tomato paste and halal Worcestershire sauce. Cook for 1 minute until the tomato paste darkens slightly.
  • Pour in 3¼ cups beef broth, diced tomatoes with their juices, the remaining salt, and remaining pepper. Bring everything to a boil.
  • Add the elbow macaroni and cook over medium heat for about 10 minutes, stirring occasionally. Add extra broth a little at a time if the pasta absorbs the liquid too quickly.
  • Remove from the heat and stir in 1½ cups shredded cheddar until fully melted.
  • Taste and adjust seasoning if needed.
  • Sprinkle the remaining cheese over the top.
  • Cover for about 3 minutes until melted, or broil for 2–3 minutes for a beautifully browned finish.
  • Garnish with parsley or scallions and serve your delicious Cheeseburger Casserole Recipe warm.

Notes

  • Top with chopped pickles, diced tomatoes, or shredded lettuce after serving for a cheeseburger-inspired finish.
