Caprese Chicken Casserole

Caprese Chicken Casserole is an easy baked chicken recipe with mozzarella, cherry tomatoes, basil, and balsamic glaze.

Ingredients
  

  • 4 boneless skinless chicken breasts or 6 chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup cherry or grape tomatoes halved
  • 2 cloves garlic minced
  • cups shredded mozzarella or fresh mozzarella slices
  • ½ cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • ¼ teaspoon red pepper flakes optional

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • Season the chicken with salt, black pepper, garlic powder, and Italian seasoning.
  • Heat olive oil in a large skillet over medium heat. Sear the chicken for 2–3 minutes per side until lightly golden.
  • Transfer the chicken to the prepared baking dish.
  • Scatter the halved cherry tomatoes and minced garlic around the chicken.
  • Top each chicken breast with shredded mozzarella or fresh mozzarella slices.
  • Bake the Caprese Chicken Casserole uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is fully melted and bubbly.
  • Remove from the oven and garnish with fresh basil leaves.
  • Drizzle with balsamic glaze and sprinkle with red pepper flakes if desired.
  • Serve immediately with pasta, rice, mashed potatoes, roasted vegetables, or a crisp green salad.

Notes

  • Chicken thighs can be substituted for chicken breasts with a slightly longer cooking time.
  • Fresh basil should always be added after baking for the best flavor and color.
  • Pair with garlic bread, roasted asparagus, steamed broccoli, cauliflower rice, or buttered pasta.
  • Leftovers are excellent for sandwiches, wraps, or salads.
