Caprese Bites Appetizer

Caprese Bites are easy Italian-inspired appetizers made with toasted baguette slices.

Ingredients
  

  • 1 French baguette sliced into 20–25 pieces, ½-inch thick
  • 2 tablespoons olive oil
  • 5 Campari tomatoes sliced and halved
  • ½ cup fresh basil leaves chopped or halved
  • 12 ounces fresh mozzarella cheese sliced into thin discs
  • Salt to taste
  • Black pepper to taste
  • Balsamic glaze for drizzling

Instructions
 

  • Preheat your oven to medium broil and position the oven rack near the top.
  • Arrange the baguette slices on a large baking sheet.
  • Brush each slice lightly with olive oil.
  • Broil for 2–3 minutes until lightly golden.
  • Remove from the oven and reduce the oven temperature to 400°F (200°C).
  • Top each toasted baguette slice with one mozzarella disc.
  • Add a basil leaf or a small amount of chopped basil.
  • Place two tomato pieces on top of each slice.
  • Season lightly with salt and black pepper.
  • Transfer the baking sheet back to the oven.
  • Bake for 8–10 minutes until the mozzarella is soft and slightly melted.
  • Remove from the oven and allow the Caprese Bites to cool for 5 minutes.
  • Drizzle with balsamic glaze before serving.
  • Serve warm and enjoy.

Notes

  • Serve immediately for the crispiest texture.
  • Great for holiday parties and summer entertaining.
  • Can be assembled ahead and baked just before serving.
  • Pair with antipasto platters or charcuterie boards.
