In a bowl, combine the steak cubes with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
Sear the Steak
Heat olive oil and butter in a large skillet over medium-high heat. Add the steak cubes in a single layer and cook for 2–3 minutes per side until browned with a flavorful crust while remaining tender inside.
Transfer the steak to a plate.
Cook the Pasta
Cook the pasta shells according to package directions until al dente. Drain and set aside.
Prepare the Cheese Sauce
Using the same skillet, melt butter over medium heat. Add minced garlic and cook for about one minute.
Whisk in the flour and cook for another minute. Slowly pour in the milk while whisking continuously. Simmer for 3–5 minutes until the sauce thickens.
Stir in cheddar, mozzarella, and Parmesan until completely melted and smooth. Season with salt and pepper.
Assemble
Add the cooked shells to the cheese sauce and gently stir until coated.
Return the steak to the skillet, nestling it over the pasta. Spoon some sauce over the steak if desired and garnish with fresh parsley.
