In a small bowl, combine all the spice mix ingredients.
Wash and cut the potatoes into fries or wedges. Pat dry thoroughly.
Toss the potatoes with 1 tablespoon olive oil and half of the spice mix.
Bake at 200°C (390°F) for 30–40 minutes or air fry for about 20 minutes until golden and crispy.
Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat.
Add the ground beef, breaking it apart while cooking until browned.
Sprinkle over the remaining spice mix and continue cooking until the beef is well browned and excess moisture has evaporated.
In a small bowl, whisk together all the burger sauce ingredients until smooth.
Assemble the Burger Bowls by dividing the crispy potatoes between serving bowls. Add shredded lettuce, seasoned beef, cheese, and pickle slices.
Drizzle generously with the homemade burger sauce and serve immediately.
