Preheat oven to 425°F (220°C).
Divide the pizza dough into 16 equal pieces.
Flatten and stretch each dough piece into a small circle or square.
Place dough pieces on a greased baking sheet.
Brush each mini crust with olive oil and sprinkle with salt and garlic powder.
Bake for 10 minutes until lightly golden.
In a bowl, combine chopped chicken with buffalo sauce.
Remove crusts from oven and top each with mozzarella cheese.
Add blue cheese crumbles and buffalo chicken evenly across each pizza bite.
Return to oven and bake for another 8–10 minutes until cheese is bubbly and crust is golden brown.
Drizzle with additional buffalo sauce if desired and serve warm with ranch or blue cheese dressing.
