Broccoli Feta Soup: Easy Creamy One Pot Recipe

Broccoli Feta Soup combines tender broccoli, potatoes, pasta, and feta in one pot.
The vegetables are partially blended for a naturally creamy texture.
Finish with crumbled feta and fresh parsley for a hearty vegetarian soup.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 large garlic cloves diced
  • ¼ teaspoon red chili flakes
  • ½ lb 225 g potatoes, peeled and cut into 1-inch cubes
  • 1 lb 450 g broccoli, cut into florets
  • 6 cups low-sodium vegetable stock or water
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 100 g ditalini or another small pasta
  • 5 oz 150 g feta cheese, crumbled, plus extra for serving
  • 1 handful fresh parsley roughly chopped

Instructions
 

  • Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the diced onion and sauté for about 5 minutes, until softened.
  • Add the garlic and red chili flakes. Cook for another minute, stirring frequently so the garlic does not burn.
  • Add the potatoes, broccoli, vegetable stock, salt, and black pepper. Stir well and bring everything to a boil.
  • Reduce the heat, cover the pot, and simmer for about 25 minutes, or until the broccoli and potatoes are very tender.
  • Turn off the heat. Carefully blend the soup with an immersion blender, leaving a few small pieces of broccoli and potato for texture.
  • Return the Broccoli Feta Soup to a gentle simmer. Stir in the ditalini and cook for 10–12 minutes, or according to the package directions, until al dente. Stir frequently to prevent the pasta from sticking to the bottom.
  • Turn off the heat and stir in the crumbled feta and chopped parsley.
  • Taste and adjust the salt and black pepper as needed. Serve warm with extra feta and, if desired, a small pinch of red chili flakes.

Notes

For an even smoother creamy broccoli soup, blend the vegetables completely before adding the pasta.
You can replace ditalini with another small pasta shape. If the soup becomes too thick as the pasta cooks, simply add a splash of hot vegetable stock or water.
Serve with warm crusty bread, toasted pita, a simple green salad, or roasted vegetables for a more complete meal.
For a milder family-friendly version, reduce or omit the red chili flakes.
