Heat a large skillet over medium heat and cook the beef sausage links until browned and fully cooked. Remove and set aside.
Add chopped turkey ham to the same skillet and cook until slightly crispy. Remove and leave about 3–4 tablespoons of fat in the pan (add oil if needed).
Add diced potatoes in a single layer. Season with salt and pepper. Cook, flipping occasionally, until golden and fork-tender (about 8–10 minutes).
Push potatoes to one side. Add onion, bell pepper, and garlic. Sauté for 3 minutes until fragrant.
Slice the sausage into bite-sized pieces and return to the skillet along with the turkey ham. Sprinkle smoked paprika.
Create 6 small wells in the mixture and crack eggs into each well. Season lightly with salt and pepper.
Sprinkle shredded cheese evenly over the skillet.
Cover and cook on low heat until egg whites are set and cheese is melted.
