Breakfast Skillet Loaded with Potatoes, Eggs & Cheese

A Breakfast Skillet is a one-pan meal made with crispy potatoes, eggs, beef sausage, and melted cheese.
Cook everything in a skillet and finish with eggs on top.

Ingredients
  

  • 8 –10 slices turkey ham chopped
  • 8 beef sausage links
  • 1 small onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1.5 lbs Russet potatoes peeled and diced into ½-inch cubes
  • Salt and pepper
  • ¼ teaspoon smoked paprika
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 2 green onions chopped
  • Salsa for serving
  • Hot sauce for serving

Instructions
 

  • Heat a large skillet over medium heat and cook the beef sausage links until browned and fully cooked. Remove and set aside.
  • Add chopped turkey ham to the same skillet and cook until slightly crispy. Remove and leave about 3–4 tablespoons of fat in the pan (add oil if needed).
  • Add diced potatoes in a single layer. Season with salt and pepper. Cook, flipping occasionally, until golden and fork-tender (about 8–10 minutes).
  • Push potatoes to one side. Add onion, bell pepper, and garlic. Sauté for 3 minutes until fragrant.
  • Slice the sausage into bite-sized pieces and return to the skillet along with the turkey ham. Sprinkle smoked paprika.
  • Create 6 small wells in the mixture and crack eggs into each well. Season lightly with salt and pepper.
  • Sprinkle shredded cheese evenly over the skillet.
  • Cover and cook on low heat until egg whites are set and cheese is melted.
  • Garnish with green onions and serve your Breakfast Skillet with salsa and hot sauce.

Notes

  • Add mushrooms or spinach for extra vegetables.
  • Serve with warm flatbread or toast.
  • A drizzle of yogurt sauce can balance the spice.
