Ingredients
  

  • 2 salmon fillets 6 ounces each
  • 1 cup fresh peaches diced
  • 1/4 cup peach juice
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a medium bowl, combine the diced peaches, peach juice, apple cider vinegar, honey, soy sauce, olive oil, Dijon mustard, garlic powder, salt, and black pepper. Stir until well combined.
  • Arrange the salmon fillets on the prepared baking sheet.
  • Pour the peach glaze evenly over the salmon, making sure each fillet is generously coated.
  • Roast the Bourbon Peach Roasted Salmon for 15 to 20 minutes, or until the salmon flakes easily with a fork and reaches your preferred level of doneness.
  • Remove from the oven and let the salmon rest for 2 to 3 minutes.
  • Sprinkle with chopped fresh parsley before serving.
  • Serve immediately with steamed vegetables, roasted potatoes, rice, quinoa, or a fresh salad.

Notes

You can substitute nectarines or mangoes for peaches.
Low-sodium soy sauce helps reduce the salt content.
Serve with wild rice, garlic mashed potatoes, roasted asparagus, or green beans.
A squeeze of fresh lemon juice before serving brightens the flavors.
