Blueberry Protein Pancakes

Ingredients
  

  • 5.3 oz blueberry Greek yogurt
  • 1 egg
  • 1/2 cup oat flour
  • 1/2 cup blueberries
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt

Instructions
 

  • Heat a large skillet over medium heat and grease with coconut oil or butter.
  • In a bowl, mix Greek yogurt, egg, and oat flour until smooth.
  • Fold in blueberries gently.
  • Pour batter onto the hot skillet.
  • Cook until bubbles form on top, then flip.
  • Cook another 2–3 minutes until golden brown.
  • Serve warm with your favorite toppings.
  • These Blueberry Protein Pancakes are best enjoyed fresh and warm.

Notes

Serve with honey, nut butter, or fresh fruit.
Add protein powder for extra protein boost.
Use dairy-free yogurt if needed.
