Ingredients
  

  • 6 large russet potatoes
  • Olive oil
  • Kosher salt
  • 3 cups cooked chicken chopped into bite-size pieces
  • 2 cups barbecue sauce
  • Sour cream optional
  • Shredded cheese optional
  • Chopped fresh chives optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Scrub the potatoes thoroughly, rinse, and pat dry.
  • Pierce each potato several times with a fork.
  • Place the potatoes on a baking sheet.
  • Lightly drizzle with olive oil.
  • Sprinkle generously with kosher salt.
  • Bake for about 65–75 minutes, or until fork-tender with crispy skins.
  • While the potatoes bake, combine the chopped chicken and barbecue sauce in a medium saucepan.
  • Warm over low heat for about 8–10 minutes, stirring occasionally until heated through.
  • Add additional barbecue sauce if you prefer a saucier filling.
  • Remove the baked potatoes from the oven.
  • Slice each potato down the center and fluff the inside with a fork.
  • Spoon the hot BBQ Chicken Stuffed Baked Potatoes filling generously into each potato.
  • Top with shredded cheese, sour cream, and chopped chives if desired.
  • Serve immediately while hot.
