BBQ Chicken Salad

BBQ Chicken Salad is a fresh and hearty salad made with BBQ-coated chicken, crisp romaine, vegetables, cheese, and ranch dressing.

Ingredients
  

  • 3 cups cooked chicken cubed
  • 1/2 cup BBQ sauce
  • 6 cups romaine lettuce chopped
  • 3/4 cup ranch dressing
  • 1 cup corn canned or thawed frozen
  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup tomatoes seeded and diced
  • 1 cup jicama diced
  • 1 cup Monterey Jack cheese shredded
  • 1 avocado diced
  • 1/2 cup green onions thinly sliced
  • 1 1/2 cups tortilla strips

Instructions
 

  • Place the chopped romaine lettuce into a large serving bowl.
  • Toss the lettuce with 1/2 cup of the ranch dressing until evenly coated.
  • In a separate bowl, combine the cooked chicken with the BBQ sauce until well coated.
  • Arrange the BBQ chicken over the lettuce.
  • Add the corn, black beans, tomatoes, jicama, Monterey Jack cheese, avocado, green onions, and tortilla strips around the chicken.
  • Drizzle the remaining ranch dressing over the top.
  • Serve your BBQ Chicken Salad immediately while the tortilla strips remain crisp.

Notes

  • Rotisserie chicken makes this recipe especially convenient.
  • Swap ranch dressing with avocado ranch or chipotle ranch for extra flavor.
  • Add crispy turkey bacon for additional texture if desired.
  • Serve with garlic bread or fresh fruit for a complete meal.
