Ingredients
  

  • 2 ripe bananas
  • 2 eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder

Instructions
 

  • Add the bananas, eggs, rolled oats, baking powder, and salt to a blender.
  • Blend until the batter is smooth and well combined.
  • Let the batter rest for 10–20 minutes to thicken slightly.
  • Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of oil.
  • Spoon small portions of batter into the pan.
  • Cook for 2–3 minutes until bubbles appear and the edges begin to set.
  • Flip carefully and cook for another 1–2 minutes until golden brown.
  • Serve the Banana Oat Pancakes warm with maple syrup and fresh fruit.
