Ingredients
  

  • 12 slices baguette
  • 4 tbsp olive oil divided
  • 1 cup goat cheese
  • 2 cups cherries pitted and halved
  • 1 tbsp fresh thyme plus more for garnish
  • 2 tbsp cherry juice optional, halal-friendly alternative
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Honey for serving
  • Balsamic glaze for serving

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, toss cherries with 2 tbsp olive oil, cherry juice, balsamic vinegar, thyme, salt, and pepper.
  • Arrange baguette slices on a baking sheet, brush with remaining olive oil, and toast for 7 minutes.
  • Spread cherries on a lined baking sheet and roast for 5–7 minutes until soft and bubbling.
  • Remove from oven. Spread goat cheese on each crostini.
  • Top with roasted cherries and thyme garnish.
  • Drizzle with honey and balsamic glaze.
  • Season lightly and serve immediately.

  • Serve immediately for best texture.
  • Extra cherries pair well with yogurt, salads, or desserts.
