Ingredients
  

For the Cod

  • pounds cod fillet pieces 4–6 pieces
  • ¼ cup chopped fresh parsley

Lemon Garlic Sauce

  • 5 tablespoons fresh lemon juice
  • 5 tablespoons extra virgin olive oil
  • 2 tablespoons melted butter
  • 5 garlic cloves minced

Coating

  • cup all-purpose flour
  • 1 teaspoon ground coriander
  • ¾ teaspoon sweet Spanish paprika
  • ¾ teaspoon ground cumin
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (204°C).
  • In a shallow bowl, whisk together the lemon juice, olive oil, and melted butter. Reserve the minced garlic for later.
  • In another shallow dish, combine the flour, coriander, paprika, cumin, salt, and black pepper.
  • Pat the cod fillets dry with paper towels.
  • Dip each fillet into the lemon mixture, then coat it in the seasoned flour mixture. Shake off any excess flour.
  • Reserve the remaining lemon mixture.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  • Sear the cod for about 2 minutes per side until lightly golden. Do not cook it completely.
  • Stir the minced garlic into the reserved lemon mixture and drizzle it evenly over the fish.
  • Transfer the skillet to the oven and bake the Baked Cod Recipe with Lemon and Garlic for about 8–10 minutes, or until the fish flakes easily with a fork.
  • Sprinkle with fresh parsley and serve immediately.

Notes

  • Haddock, pollock, or halibut can be substituted for cod.
  • Fresh parsley adds a bright finish, but dill also pairs beautifully with cod.
  • For extra richness, add a few thin slices of butter on top before baking.
  • Pair with steamed vegetables, couscous, quinoa, or a fresh salad.
