Baked Caprese Chicken is a simple Italian-inspired dinner made with juicy chicken breasts, tomatoes, fresh mozzarella, basil, and balsamic glaze.

Ingredients
  

  • 4 boneless skinless chicken breasts about 2½ pounds
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup grape tomatoes
  • 4 –8 tomato slices
  • 4 slices fresh mozzarella
  • Fresh chopped basil for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray.
  • Arrange the chicken breasts evenly in the baking dish.
  • In a small bowl, whisk together the balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and black pepper.
  • Pour the sauce over the chicken and turn each breast to coat evenly.
  • Scatter the grape tomatoes around the chicken and place tomato slices on top of each breast.
  • Bake the Baked Caprese Chicken uncovered for 20–25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • During the final 5 minutes of baking, place one slice of fresh mozzarella on each chicken breast.
  • For a golden finish, broil on HIGH for 2–3 minutes until the cheese bubbles and lightly browns.
  • Garnish generously with chopped fresh basil before serving.

Notes

  • Fresh basil provides the best flavor.
  • Reduce the honey slightly if you prefer a tangier balsamic glaze.
  • Add spinach or sliced mushrooms before baking for extra vegetables.
  • Serve with garlic bread, mashed potatoes, or roasted asparagus.
